Christmas Breakfast Soufflé
Looking for a way to use up the rest of that Christmas ham? Every Christmas Morning at Verd and Lucile's we would have this wonderful casserole, made from ham, bacon, sausage, or any combination of meats. With the melty, cheesy goodness, it is a meal all by itself.
8 slices of white bread, buttered on both sides, crusts removed.
8 oz Velveta Cheese
1 C diced ham
1 C cooked bacon (crumbled, optional)
1 C broccoli (optional)
1 qt half and half
Salt and pepper to taste
Cut bread slices into cubes and line the bottom of a 9x13 casserole dish
Salt and pepper bread cubes
Cut Velveta into small cubes and place randomly on top of bread
Add in ham, bacon, broccoli, and/or any other desired filling (I like sausage, but I am the only one)
Whip the eggs and half and half together until smooth ans pour over top of bread and fillings.
Cover with foli and place in fridge for several hours (overnight is best)
Remove foil and bake at 300° for 40 minutes or until a knife comes out clean from the center.
